sauteed chicken with spinach and mustard sauce

I turned mine into a salad, it was good.
Serves 4

1 tablespoon vinegar
3-4 cloves minced garlic
1 tablespoon butter
1/4 cup mustard
1 tablespoon olive oil
4 boneless, skinless chicken breast half (6 to 8 ounces)
Coarse salt
Ground pepper
1 bag baby spinach

Directions

Season chicken with salt and pepper. In a large skillet, heat oil over medium-high heat. Add chicken; cook until browned, turning once, 8 to 10 minutes.

Add 1 cup water. Reduce heat to medium-low; cover, and simmer until chicken is cooked through, 4 to 6 minutes. Transfer chicken to a plate; cover to keep warm.

Make mustard sauce: Add minced garlic to same pan; cook over medium heat, stirring . Stir in mustard and vinegar; cook 1 minute. Remove from heat. Add butter; swirl pan until incorporated. Stir any accumulated chicken juices into sauce.

In a medium bowl, toss spinach with half the mustard sauce. Place chicken on a serving plate; drizzle with remaining sauce. Serve spinach on the side.

onion chicken

Yummy. This recipe has the best flavor to it! It will become a regular in my home. Sorry Bradshaw girls, but I love onions.

  • 1 small onion for every 2 chicken breasts

  • 2 Tablespoons Olive Oil

  • Paprika

Preheat oven to 450 degrees. In a glass baking dish, add chicken and thinly sliced onions. Drizzle with olive oil, salt and pepper, then toss to coat. Arrange chicken on top of onions. Season chicken with paprika.

Bake for 30-40 minutes, until chicken is cooked through, stirring intermittently.

italian chicken

We can thank my family for this gem. I make it a lot. I swear it tastes better than my picture looks ;)

Chicken (as much or as little as you want, any kind)
Wishbone Italian Dressing (at least 1/3 bottle)
Lee & Perins Worcestershire Sauce
Butter
Dried Thyme

Pre-heat oven to 350 degrees. Cut chicken into good size chunks (I do this because it cooks faster, but not necessary). Place in glass baking dish. Pour in Italian Dressing until dressing is at least 1/2 way up the side of the chicken, and make sure you get some on top. Add 20-30 dashes or Worcestershire sauce, you want it to be a dark golden brown when done. Place a small pat of butter on each chicken piece. Add salt, pepper and thyme leaves, generously. Bake for 40 minutes or until chicken is cooked through.

***By the way, I am a food snob when it comes to Italian Dressing and Worcestershire Sauce. I can't do generic.

chicken with grape tomatoes and mushrooms

Top 3 Hated Foods as a Child:
1. Olives
2. Tomatoes
3. Mushrooms

Top 3 Hated Foods as an Adult:
1. Olives
2. Black Olives
3. Green Olives

I have come around to tomatoes and mushrooms. So much, in fact, they have become among my favorites. Sorry, Olives, but I just don't see that happening for you. Maybe when I am 90 and my taste buds go and I love Chinese Buffets and Golden Corrall.

Also, the only reason I bought mushrooms and tomatoes was because they were a steal! I am normally too cheap/poor.

Anywho--this recipe was inspired by another, but is my own. Ehem.

Serves 2...but you can easily control this by increasing the amount of chicken/ingredients

2 Chicken Breasts (I cut them in smaller pieces so they will cook faster)
Olive Oil
1/2-1 Pint Grape Tomatoes, halved
1/2 Pint of Mushrooms, sliced (slice them upside down...it's easier, in case you are dumb like me and common sense decided not to inform you of that)
1/2 an onion, chopped (I used a few green onions because they were about to kill over in my fridge)
4 dashes of dried Thyme
1 tsp Lemon or Lime juice

In a large skillet, heat 1 Tbsp of Olive Oil over medium-low heat. Add chicken and season well with salt and pepper. Cook chicken, only turning once for about 30-35 minutes or until cooked through.
OR, cook the chicken for 10 minutes then get tired of waiting because you are
eating all the tomatoes that are supposed to go in your sauce, put the chicken
in a glass baking dish, cover with foil, throw in a 350 degree oven for about
20-40 minutes while you are making your sauce. That's what I did.
Using the same skillet, raise the heat to medium. Add onions (unless you are using green onions, then you can add everything all at once). Cook until tender. Add tomatoes, mushrooms and thyme until tomatoes release their juices and get pruny-lookin'. At that point, remove from heat and add about 1/2 -1 Tbsp Olive oil and 1 tsp lime or lemon juice. You are done. Serve over chicken and marvel at what you just cooked.

Aw, yeah.

Substitutions:
Green Onions for Onions
1 can Diced Tomatoes for Grape Tomatoes
Garlic for Mushrooms (or add garlic anyway)

hawaiian haystacks

Believe it or not, finding a picture of this was hard. I found this image off of some ladies old blog. I hate olives. And that big clump of cheese at the bottom bothers me. Beggars can't be choosers.

Anyway--easy, delicious and cheap. I am sure most of you have had them (although the old blogger claimed that only native Utahans knew of them, that's bull. I am from AZ and my WA relatives knew too). If not, do try them.

Cook some rice. Heat up some cream of chicken soup (you can use milk to make it thicker...and 1 can feeds a good size portion to 2 people). You can add cooked cubed chicken if you like, but not necessary.

Here's the fun part, add any toppings you like. You really can't go wrong, except with olives. Here are a few typical toppings I have seen:
  • shredded cheese
  • Pineapple Tidbits
  • Green Onion
  • Celery
  • Shredded Coconut
  • Slivered Almonds
  • Chow Mein Noodles
  • Diced Tomatoes
  • Peas
  • Mandarin Oranges
  • Green Bell Pepper
  • and last night we tried Bacon because it was in the fridge. Yum.

I always use whatever toppings I have instead of buying more. Less exciting, but it saves me cash.

Chicken Tacos

Super easy and yummy. I can thank my Aunt Wendie for this one.
4 Chicken Breasts (I used 3, that's all I had, and it worked out fine)
1 jar of Salsa
1 Cup of water
1 Pkg. Taco seasoning, but I didn't have any and it turned out delicious!
Combine in a crock pot. Cook on high for 4 hours. Eat with tortillas, cheese, sourcream, etc.
They are messy but crave-worthy.
